you can't do it in software really, you at least need a controller/pad to interface with the PC or better, actual decks IMHO.

Yeh... for example you can't use virutal dj using the mouse/keyboard to mix, it's so clunky. You need to touch the tunes!

That really is 'playing by ear' - unless you know the key and speed but I don't remember seeing that on the vinyls.
